The best way to store, eat, enjoy and use up all of those carrots

Have you ever discovered a bag of carrots in the refrigerator that has gone limp and soft? Before discarding them, give them a chance.

If your carrots appear sad and floppy, they might require a little tender loving care to regain their crispness. Reviving forgotten carrots is easy — roasted, pickled, dehydrated or shredded, they can be turned into many nutritious and delicious recipes.

With their natural sweetness and abundant nutrients, carrots are one of the most versatile vegetables available. At Second Harvest, we have redistributed millions of pounds of carrots and know that the nutritious vegetable is a staple to many of our charitable partners and the families they support. We’ve
discovered that if you scrub (no need to peel and waste the nutrients beneath the skin!) carrots and chop them down to a manageable size on the day they land in your kitchen, they are more likely to be eaten as snacks and not forgotten in a back at the back of your refrigerator.

The important thing is to be sure you are using all the nutrients that come in the entirety of the type of carrot that works for you. There is no wrong way to eat these delicious vegetables, only a variation of more right choices. If you buy a freshly picked bunch with the tops on, use the greens; if you buy a bag and plan to peel them, use the peels. I’m happy to share some easy ways to get the maximum bang for your buck.

Veggie Peel Soup Base

There’s no need to peel your carrots, but if you do, go through the extra step of scrubbing well first with a
clean mushroom or even a nail brush before peeling. Reserve the peels with onion skins, garlic skins or other
