Homemade Gnocchi

An easy gnocchi recipe using breadcrumbs from leftover bread.

To make gnocchi, all you need is salt, flour, water and breadcrumbs.

INGREDIENTS:

For every cup of breadcrumbs, use ½ tsp of salt and 1 to 1 ½ cups of all-purpose flour.

DIRECTIONS:

Whiz ingredients the blender until it forms a dough ball. Knead the ball and cut it into balls a bit larger than a golf ball. Then, roll each ball into a “snake” that is about ½ inch in diameter, dusting your surface with more flour if anything gets sticky.

Cut with a knife into 1-inch-long pillows and set aside to dry slightly.

If you wish to have sauce, bring to a boil 1 cup of tomato sauce (ketchup will do!) with 2 cups of water, drop the gnocchi into the boiling liquid and stir gently just to cook through. Add anything you would like to the tomato broth: garlic, dried herbs, canned beans or bits of wilted greens.

You could always simply boil in water for 5 minutes (add a cup of frozen peas for the last 2) and stir in some butter and garlic.
