INGREDIENTS:
Bread or buns
1 egg
1/4 cup milk
Creamy Choice:
Sour Cream
Plain Greek Yogurt
Cottage Cheese
Canned Cream Soup
Toppings of choice:
Walnuts
Garlic
Parsley
Dried Cranberries
METHOD
Cut bread ends or buns into 2-inch cubes and set them in a single layer in a loaf pan or casserole dish.
In a separate bowl, beat 1 egg per 1 cup of bread and add ¼ cup of milk per egg.
This is a very forgiving mixture that can take the addition of sour cream, plain Greek yogurt, cottage cheese, canned cream soup or any other creamy things hanging around your fridge.
The trick is to mix the bread and egg mixture together and compress it into a baking dish, best if covered and weighted for at least 8 hours.
Bake as is for at least an hour (depending on your dish and depth) at 350°F or until the centre is firm and hot.
To dress up this dish, add toppings like chopped walnuts, garlic and parsley, and dried cranberries, and then bake for another 15 minutes to crisp the top.
Leftovers can be cut into squares and frozen.
