Ingredients

  • 3 eggs
  • 1 1⁄2 cups (375 mL) sugar
  • 1⁄4 cup (50 mL) flour
  • 1⁄2 tsp (2 mL) salt
  • 1⁄4 tsp (1 mL) lemon zest
  • 2 tsp (10 mL) lemon juice
  • 4 tsp (20 mL) melted butter
  • 1 vanilla pod
  • 1 cup buttermilk

Method

  1. Par bake a pie shell for 10 to 15 minutes.
  2. Whisk together all filling ingredients except buttermilk; add buttermilk last then, pour into cooled pie shell and bake at 350F (180C) for 40 to 45 minutes or until filling evenly jiggles throughout.
  3. Cool for an hour before serving.
