Carrot Breakfast Loaf with Muffin Mix

A simple recipe using your favorite bran muffin mix and carrots for a delicious breakfast loaf

Purchase your favourite bran muffin mix and stir a cup of thawed grated carrots into the dry mix before adding the remaining ingredients to help keep the carrots suspended in the loaf.

Then, for extra flavour and antioxidants, add a tsp each of cinnamon and turmeric before adding the wet ingredients and mix. Instead of making muffins empty the batter into a greased loaf and bake at a slightly lower temperature for slightly longer and make sure the centre is cooked (it will puff up and crack).

For a vegan option,

Chose a muffin mix that calls for you to add eggs rather than one that has egg powder in it. Skip the eggs and use 1 tbsp of bean water from a can of beans or lentils for each egg required in the instructions. The consistency and protein structure of bean water is similar to albumin in eggs and is a great baking substitute.

Plus, you won’t be wasting that nutritious bean water (aquafaba).
