According to Food Network Canada, Canadian’s favourite cookie is a classic shortbread closely followed by the
classic chocolate chip. Holiday cookies often taste sweeter because of their nostalgic ties and that’s why Harrowsmith’s food editor, Chef ILona Daniel, puts empire cookies on the top of her list. “My mom and I would go for adventures to explore old home style bakeries, and one of her faves was a bakery in Hagersville, Ontario that made the cookies,” she says. “As mom experimented with flavours to make them at home for my Christmas care packages, she would use rose jam in place of the traditional raspberry and rose water & maraschino cherry juice in the flat icing for the top.”

3-Ingredient Shortbread Cookies

  • Preheat oven to 325°.
  • Cream butter 1 cup unsalted butter, softened, and 1/2 cup sugar until light and fluffy.
  • Gradually beat in 2 cups of all-purpose flour.
  • Press dough into an ungreased 9-in. square baking pan.
  • Prick with a fork.
  • Bake until light brown, 30-35 minutes.
  • Cut into squares while warm.
  • Cool completely on a wire rack.
  • If desired, dust with confectioners’ sugar.
